Hissy Chick was born during the infamous Chicken Sandwich Wars. While many places offered a grilled chicken sandwich, very few focused on doing it — and doing it well.

How Did Hissy Chick Get Started?

My name is Racheal Felder, and I've been in the food industry since I was 14 years old. Years ago, my family owned a restaurant where we served everything from burgers and steaks to our popular catfish and yes, even Yard Bird sandwiches — available fried, grilled, or blackened. We hand-breaded chicken and fish daily and fried everything from appetizers to entrées.

When that restaurant closed in 2014, I knew one day I would return to the food industry — but on a much smaller scale. Originally, my next adventure was supposed to be called Shea's Shack. Every time I sat down to create a menu, I found myself going right back to all of our favorite fried foods. The problem? I wanted absolutely nothing to do with fryers. I had already done my time! 😂

No matter how hard I tried, I couldn't shake the idea of chicken. I kept hearing things like chicken alfredo, chicken sandwiches, over and over. Eventually, I felt like God was saying, “Girl, this is what you're going to do.”

That's when I stopped fighting it and started focusing on what would become the foundation of Hissy Chick: handcrafted chicken sandwiches and a scratch-made pasta made with the same flavors and quality we had built on years before.

I used the exact same seasoning blend we had used at our family restaurant, partnered with the same bakery for our buns, created one new signature sauce, and brought back three favorites. The menu was coming together, but I still didn't have a name.

Then one day, while driving to my hometown in Alabama, it hit me: Hissy Chick.

I looked at my husband and said, “That's it.” At the time, we owned chickens, and every single one of them had a personality — and plenty of attitude. They reminded me of the three original sandwiches I had created. So much boldness and flavor, made to stand out, not be boring. In that moment, Hissy Chick was born.

We started with a pop-up tent, three sandwiches, a variety of cookies, and our now-famous Hand-Squeezed Blue Sparkle Lemonade ✨. Since then, we've purchased a food trailer, traveled countless miles, served communities across multiple counties, and built this dream one event at a time.

Today, Hissy Chick has grown into both a food truck and a storefront in Magnolia, Texas. We've expanded our menu to include all things chicken (yes, even our bacon is chicken! 🥓), while staying true to what started it all: handcrafted food made with heart.

Different? Absolutely. But I believe God called me to serve others, and food is simply the vehicle He gave me to do it.

Hissy Chick Junior Team

Next Generation.

The Hissy Chick Junior Team isn't babysitting — it's a real kitchen experience for kids ages 8–14. Campers learn knife skills, food safety, and how to build real flavors from scratch. They leave with a certificate, a t-shirt, and the kind of confidence that only comes from doing something hard and doing it well.

Community First

Rooted in
Magnolia, TX.

Hissy Chick grew up right here in the Magnolia and Woodlands community. From our regular spot at the Magnolia Farmers Market to pop-ups around The Woodlands, we've built this brand one sandwich at a time alongside the people who live here.

We show up at local festivals, school events, church fundraisers, and neighborhood gatherings because this community is the reason we exist. When you eat with us, you're not supporting a chain — you're supporting a local family that genuinely loves what they do.
